Whenever we eat out, it's the first (and sometimes the only) thing we get to eat because it's so good and very filling. This past summer we learned how to make Napoletano style. Since Giancarlo's mom is from that area, she knows how to make it well. Normally, you can order this dish in a white wine sauce, but our favorite is with the spicy red sauce.
Here's how it goes:
Heat oil in a large saucepan.
Add in onion and garlic, stirring until wilted without browning.
Then add in red vinegar and cook briefly. Add tomatoes, oregano, pepper flakes, salt and pepper.
Bring to a boil.
You also add the clams at this time too, and bring everything to a boil and let cook for 4-5 minutes or until all the shells have opened up.
Serve in a bowl with all the liquid spooned into the mussels!
